Quick and Easy Vegan Tacos

Super tasty gluten-free vegan tacos filled with tofu, avocado, and slaw!

  • 1 pkg tofu
  • 1 pkg slaw
  • 3 limes
  • 1 avocado
  • 2 tbsp cilantro leaves
  • 1/3 c tamari
  • 1 tbsp brown sugar
  • 1 c Homemade Salsa Roja


  1. Make sure that the tofu has been patted dry with a paper towel to remove excess liquid.
  2. Cut the tofu into cubes and mix with the lime juice, tamari and cilantro leaves and allow to marinate for 5-10 minutes in the refrigerator.
  3. Once tofu is ready, heat a saucepan on medium heat and throw in the tofu together with the marinade. Allow to simmer for about 5 minutes.
  4. In the meantime, heat the corn tortillas about 1 minute on each side.
  5. Once everything is ready, assemble the tofu and all remaining ingredients to form tacos. Serve with Homemade Salsa Roja if desired.
