Raw Beet Salad with Apple

Ingredients

  • 1 large red beet
  • 1 small orange beet
  • 1/2 jicama
  • 1 tbsp green onion, chopped
  • 1 green apple

Dressing (optional)

  • 1/3 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 tbsp red onion, diced
  • sea salt to taste

Optional

  • 1 tbsp sesame seeds

Instructions

  1. Remove the skin of the jicama and beets.

  2. Afterwards, shred the jicama, apple, and beets with a grater or food processor.

  3. Thinly dice the green onion and red onion. 

  4. Combine the jicama, beets, apple, and green onion in a bowl. 

  5. In another bowl combine the olive oil, apple cider vinegar, sea salt, and red onion to form a dressing. 

  6. Pour the dressing over the fruit and veggies. Top with sesame seeds (optional).
