Remove the skin of the jicama and beets.
Afterwards, shred the jicama, apple, and beets with a grater or food processor.
Thinly dice the green onion and red onion.
Combine the jicama, beets, apple, and green onion in a bowl.
In another bowl combine the olive oil, apple cider vinegar, sea salt, and red onion to form a dressing.
Pour the dressing over the fruit and veggies. Top with sesame seeds (optional).
