Amazingly Easy Indian Dal

A super easy vegan recipe for delicious Indian lentils!

Ingredients

  • 1 tbsp ginger
  • 1 1/2 cup yellow or red lentils
  • 1 red onion
  • 3 tomatoes
  • 1 1/2 tbsp olive oil
  • 1 teaspoon cumin seeds
  • 2 garlic cloves
  • 1 teaspoon turmeric
  • 2 teaspoons garam masala
  • 3 cups boiling water water
  • fresh cilantro
  • sea salt & pepper to taste

Instructions

  1. Dice tomatoes and onions and chop the garlic and ginger.
  2. Heat oil in a large skillet over high heat.
  3. Add red onions, garlic, tomatoes, and ginger.
  4. Slowly add the cumin seeds and turmeric and saute for until fragrant.
  5. Add the lentils and 3 cups of boiling water and cook for about 10 minutes.
  6. Top with cilantro leaves ands erve with basmati rice or naan.
