Easy Pasta Salad with Sundried Tomatoes

A yummy Italian pasta salad with sundried tomatoes.

  • 300 g gluten free pasta
  • 1 c sundried tomatoes
  • 1/3 c olive oil
  • 3 tbsp balsamic vinegar
  • 1 small garlic clove
  • 1 bunch fresh basil
  • sea salt & pepper to taste


  1. Cook pasta according to instructions.
  2. In the meantime, add garlic, sundried tomatoes, and balsamic vinegar to the blender and pulsate. Slowly add the olive oil until mixture is a thick paste.
  3. Once ready, drain the pasta and let it cool off. Mix with the sundried tomato paste. Add in the basil leaves and sprinkle sea salt and pepper to taste.
