Easy Veggie Curry with Turmeric

Yummy vegan coconut curry with veggies and spiced with turmeric!

Ingredients

  • 1 zucchini
  • 1 shallot
  • 2 garlic cloves
  • 1 hot orange pepper
  • 13 1/2 oz BPA-free can coconut milk
  • 2 c chopped mushrooms
  • 1 tsp turmeric
  • 1 tbsp coconut oil
  • sea salt & pepper to taste

Instructions

  1. Chop the zucchini, shallot, garlic cloves, and orange pepper.
  2. Saute the orange pepper, garlic and shallots until fragrant.
  3. Add the mushrooms and zucchini to the saute and stir until cooked (about 5 minutes).
  4. Add the coconut milk and turmeric to the mix and allow to cook for 10 minutes.
  5. Serve alone or over jasmine rice.
