20 Minute Gluten Free Ramen Noodles

Easy rice noodle recipe with shiitake mushrooms in a savory sweet sauce!

Ingredients

  • 2 garlic cloves
  • 1/4 c tamari
  • 1 tbsp maple syrup
  • 2 green onions
  • 1 tsp ginger
  • 1 tbsp coconut oil
  • 5 oz sliced shiitake mushrooms
  • 1 package thick rice noodles
  • 1 small carrot
  • 1/2 cucumber

Instructions

  1. Chop the carrots, cucumber, green onions, ginger, and garlic cloves.
  2. In a small bowl, combine the green onions, ginger, garlic cloves, tamari, and maple syrup to form a sauce.
  3. Place the rice noodles in a pot with warm water and allow them to cook (about 5-10 minutes).
  4. Place 1 tbsp coconut oil in a pan and slowly add the shiitake mushrooms together with the sauce. Allow 5 minutes to cook.
  5. Drain rice noodles when ready and top them off with the shiitake mushroom sauce. Serve with the carrots and cucumber.
