Easy Red Quinoa Tabbouleh Salad

A really healthy gluten-free version of the original tabbouleh salad!

Ingredients

  • 2 tomatoes
  • 1 shallot
  • 1 c pomegranate seeds
  • 1 lemon
  • 1/2 c red quinoa
  • 1 bunch fresh mint
  • 1 bunch fresh parsley
  • 3 tbsp . extra virgin olive oil
  • 1/2 cucumber
  • *sea salt and pepper to taste

Instructions

  1. Combine 1/2 cup red quinoa with 1 cup boiling water and allow to cook for 15 minutes.
  2. Dice the tomatoes, cucumber, and shallots and chop the parsley and mint.
  3. Combine extra virgin olive oil with lemon juice.
  4. Once the quinoa is ready, combine all ingredients together in a bowl and mix.
