Gluten Free Pasta with Marinara Sauce

An easy pasta recipe with homemade marinara sauce!

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 shallot
  • 2 garlic cloves
  • 1 tsp dried oregano
  • 2 tbsp tomato paste
  • 350 g cherry tomatoes
  • 300 g brown rice pasta
  • sea salt and pepper to taste

Instructions

  1. Chop the shallot and garlic cloves.
  2. In a blender, puree the cherry tomatoes.
  3. Sauté the garlic and shallot with 1 tbsp extra virgin olive oil (about 1 minute).
  4. Add the pureed tomatoes, tomato paste, and oregano to the garlic and shallot. Cook for approximately 15 minutes.
  5. In another pot cook the pasta until al dente.
  6. Top the pasta with the marinara sauce and serve.
