Vegan Burritos with Lime Quinoa

Delicious gluten-free burritos filled with quinoa and black beans!

Ingredients

  • 1/2 c white quinoa
  • 1 c boiling water
  • 1 tbsp sea salt to taste
  • 2 gluten-free tortillas about 8 inches
  • 1 organic avocado
  • 1/2 c organic corn
  • 1/2 c organic black beans
  • salsa roja to serve

Instructions

  1. Set a kettle to boil 1 cup of water and pour over quinoa.
  2. Cook quinoa for about 10 minutes.
  3. About 5 minutes before quinoa is ready, heat the tortillas (15 seconds on each side).
  4. Once quinoa is ready, drain annd mix with sea salt and 1 tbsp lime juice .
  5. When ready assemble all ingredients into tortilla, roll it up, eat, and serve with salsa roja
