This recipe, originally called “Panzanella”, originated in Tuscany in the 14th century from “pan lavato” which means washed bread. Originally this Italian Tuscan Salad was made only with stale bread and whatever vegetables were available at that time. It wasn’t until a couple of centuries later (17th century to be exact) that tomatoes were first introduced to Italy from the New World and therefore required in the Panzanella recipe.
You can also use whatever type of tomatoes you prefer (I used green tomatoes and grape tomatoes) for this salad. This amazing bread salad recipe is vegan and you can also make it gluten-free by replacing the bread with a gluten-free option. Although this recipe is meant to be served as a side dish or appetizer, you can easily have it as a main meal since it’s so yummy and filling. Super Easy Italian Tuscan Salad
A tasty Tuscan bread and tomato salad!
- 4 c chopped stale bread ciabatta, flat bread or sourdough
- 1 small red onion
- small bunch basil
- 500 g mixed tomatoes
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- sea salt & pepper to taste
Dice the bread and chop the tomatoes and onions.
Mix the olive oil with the red wine vinegar to form the dressing.
Mix all ingredients together in a bowl and serve.
