The moment you start applying heat to them, the beets start slowly losing their betalain (phytonutrients) properties.

Raw Beet Salad with Apple
- 1 large red beet
- 1 small orange beet
- 1/2 jicama
- 1 tbsp green onion, chopped
- 1 green apple
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/2 tbsp red onion, diced
- sea salt to taste
- 1 tbsp sesame seeds
Remove the skin of the jicama and beets.
Afterwards, shred the jicama, apple, and beets with a grater or food processor.
Thinly dice the green onion and red onion.
Combine the jicama, beets, apple, and green onion in a bowl.
In another bowl combine the olive oil, apple cider vinegar, sea salt, and red onion to form a dressing.
Pour the dressing over the fruit and veggies. Top with sesame seeds (optional).
