Tacos are one of my favorite foods ever. Growing up in Texas we had tacos for breakfast, lunch, and dinner. This Quick & Easy Vegan Tacos recipe is mega healthy providing you with many nutrients. The slaw in this recipe is a cruciferous vegetable which helps prevent cancer and since it’s raw it’s extremely rich in enzymes and high in fiber. Avocadoes are also one of the best-known superfoods, they are really high in vitamins (E, K, C, B6), are loaded with potassium (more than bananas) and are high in monounsaturated fatty acids which help lower cholesterol. It’s best served with 5 Ingredient Homemade Salsa Roja.

Once everything is ready, assemble and EAT.
Quick and Easy Vegan Tacos
Super tasty gluten-free vegan tacos filled with tofu, avocado, and slaw!
- 1 pkg tofu
- 1 pkg slaw
- 3 limes
- 1 avocado
- 2 tbsp cilantro leaves
- 1/3 c tamari
- 1 tbsp brown sugar
- 1 c Homemade Salsa Roja
Make sure that the tofu has been patted dry with a paper towel to remove excess liquid.
Cut the tofu into cubes and mix with the lime juice, tamari and cilantro leaves and allow to marinate for 5-10 minutes in the refrigerator.
Once tofu is ready, heat a saucepan on medium heat and throw in the tofu together with the marinade. Allow to simmer for about 5 minutes.
In the meantime, heat the corn tortillas about 1 minute on each side.
Once everything is ready, assemble the tofu and all remaining ingredients to form tacos. Serve with Homemade Salsa Roja if desired.
