I love pomegranates, they are both sweet and sour and can complement so many dishes. This Juicy Pomegranate Salad is really easy to make (5 minutes!), extremely healthy, vegan and gluten free.
Aside from being super delicious, pomegranates are rich in antioxidants which help ward off disease while at the same removing the oxidizing elements in your body. Cucumbers also remove toxins from your body, helps you lose weight and keeps your body hydrated. Both pomegranates and cucumbers are really good for your skin and aid in the anti-aging process. Combined with the mint and parsley, it is a great dish to keep you healthy and energized. Try this salad as a side dish or as a main meal, it’ll be sure to be a crowd pleaser 🙂
1. What you’ll need:
-1 large pomegranate
-1 bunch flat leaf parsley
-1 small bunch mint
-1 tbsp extra virgin olive oil
-2 tbsp raw apple cider vinegar
-1 tsp sea salt

- 1 large pomegranate or 1 cup pomegranate seeds
- 1 bunch flat leaf parsley
- 1 small bunch mint
- 2 cucumbers
- 1 tbsp extra virgin olive oil
- 2 tbsp raw apple cider vinegar
- 1 tsp sea salt
Chop the flat leaf parsley, mint, and cucumbers.
Mix all ingredients in a bowl and serve
